Vassilopita cake flavoured with mandarin oranges and chestnuts

Vassilopita cake flavoured with mandarin oranges and chestnuts

Preparation time: 15 minutes
Cooking time: 45-50 minutes

INGREDIENTS (serves 12 people)

280 g butter
200 g clarified butter
500 g all-purpose flour
3 tsp baking powder
6 large eggs
300 g powdered icing sugar
150 g honey
200 ml mandarin juice
1 tbsp tangerine zest
½ tsp ground cloves
150 g chestnuts (boiled)
Powdered sugar and 5 marrons glacé to garnish

METHOD

  1. In a bowl, beat the eggs with the icing sugar and slowly add the honey, the mandarin juice, and zest.
  2. Mix the flour with the baking powder and cloves, and slowly add them to the above mixture, alternating with the butter.
  3. Add the chestnuts and stir.
  4. Pour the mixture into a well-buttered 24 cm cake tin.
  5. Bake for 45 minutes at 170o
  6. When the cake has completely cooled, sprinkle with the powdered sugar and garnish with the marron glacé.
