RECIPES WITH BUTTER
Vassilopita cake flavoured with mandarin oranges and chestnuts
Preparation time: 15 minutes
Cooking time: 45-50 minutes
INGREDIENTS (serves 12 people)
280 g butter
200 g clarified butter
500 g all-purpose flour
3 tsp baking powder
6 large eggs
300 g powdered icing sugar
150 g honey
200 ml mandarin juice
1 tbsp tangerine zest
½ tsp ground cloves
150 g chestnuts (boiled)
Powdered sugar and 5 marrons glacé to garnish
METHOD
- In a bowl, beat the eggs with the icing sugar and slowly add the honey, the mandarin juice, and zest.
- Mix the flour with the baking powder and cloves, and slowly add them to the above mixture, alternating with the butter.
- Add the chestnuts and stir.
- Pour the mixture into a well-buttered 24 cm cake tin.
- Bake for 45 minutes at 170o
- When the cake has completely cooled, sprinkle with the powdered sugar and garnish with the marron glacé.
