RECIPES WITH CHEESE
"Skioufikta" (Cretan pasta) with butter, eggs and pepper

INGREDIENTS (serves 4 people)
120 g melted butter (4 tablespoons)
150 g STAMOU graviera
400 g Skioufikta (Cretan pasta)
4 eggs, organic
Freshly ground pepper
Coarse salt
METHOD
- Boil the skioufikta in salted water and drain once done.
- Grate the graviera and transfer to a deep pan with butter, on a medium heat, and once brown pour in the skioufikta (pasta) and mix well.
- Fry the eggs, over easy, in the remaining butter (be sure not to overcook the yolk).
- Distribute the skioufikta (pasta) onto each plate and place the fried egg on top, breaking the yolk.
- Season with a generous amount of pepper and a pinch of coarse salt.
