RECIPES WITH CHEESE
Peinirli with graviera cheese and aromatic herbs
Preparation Time: 1- 1 ½ hours
Baking Time: 25 minutes
INGREDIENTS (serves 4 people)
400 g flour
100 g yellow flour
8 g dry yeast
100 ml STAMOU Fresh cow’s milk, lukewarm
45 g butter
1 tsp sugar
1 tsp salt
For the filling:
400 g STAMOU Graviera cheese
1-2 tbsp STAMOU “Plousio” Yoghurt
1 tsp smoked paprika
100 g butter
4 tbsp finely chopped herbs (oregano, thyme, mint)
METHOD
- In a large bowl, combine both types of flour and salt.
- Make a well in the center and add the yeast, sugar, and milk.
- Let the yeast activate for about 10 minutes, then knead the dough gradually adding about 200 ml of water and the melted butter, until the dough is smooth and no longer sticks to the sides of the bowl.
- Cover the dough and let it rise in a warm place until it doubles in size.
- Divide the dough into 4 portions and roll each into an oval shape.
- Fold and twist the edges slightly to form a boat-like shape.
- Grate the graviera cheese and mix it with the yogurt and herbs.
- Fill the peinirli with the cheese mixture and brush them with butter.
- Bake in a preheated oven at 200°C for 25 minutes.
- Before serving, brush with butter and sprinkle with smoked paprika.
