RECIPES WITH KEFIR
Multigrain Kefir Bread
Preparation time: 10 minutes
Cooking time: 45–50 minutes
INGREDIENTS (for 1 loaf)
1 Kefir STAMOU natural flavour
225 g all-purpose flour
225 g whole wheat or multigrain flour
1 tsp baking soda
1 tsp salt
2 tsp coriander seeds (coarsely crushed)
75 g rolled oats
2 tbsp flaxseeds
25 g butter (cold, cubed)
FOR SERVING
150 g butter
2 tbsp Kefir STAMOU natural flavour
½ tsp flaky sea salt
METHOD
- Preheat the oven to 175°C. In a large mixing bowl, combine both types of flour, baking soda and salt.
- Add the cold butter and rub it into the flour mixture using your fingertips.
- Stir in the rolled oats, flaxseeds, and crushed coriander seeds.
- Pour in the kefir and mix quickly using a spatula.
- Knead the dough lightly, shape it into a 20 cm round loaf, and score the surface.
- Bake for 45–50 minutes, until golden brown with a crispy crust.
- Let the bread cool on a wire rack, covered with a kitchen towel.
- In a food processor, blend the butter, kefir, and sea salt until smooth. Refrigerate until ready to serve.
- Slice the bread and enjoy it with the soft butter!
