RECIPES WITH MILK
Middle Eastern semolina pudding (halvas with milk)
Preparation time: 15 minutes
Baking time: 30 – 35 minutes
INGREDIENTS
1.5 L STAMOU fresh cow’s milk
3 – 4 cloves and 1 cinnamon stick
200 g butter
300 g sugar
300 g coarse semolina
1/2 cup crushed almonds or pistachios
Pistachios for garnish
METHOD
- Simmer the milk with the sugar, cinnamon and cloves, and then strain it.
- In a saucepan, melt the butter over a low heat, add the semolina, and continue stirring until it turns light golden-brown.
- Remove from heat and slowly add the milk, stirring constantly.
- Return the pan to the heat and continue stirring until the mixture comes off the sides of the pan.
- Pour the halvas into a well-oiled or damp mold, and press down lightly with a spoon.
- When it has cooled completely, unmold on a serving dish. Sprinkle with coarsely chopped pistachios.
