Middle Eastern semolina pudding (halvas with milk)

Middle Eastern semolina pudding (halvas with milk)

Preparation time: 15 minutes
Baking time: 30 – 35 minutes

INGREDIENTS

1.5 L STAMOU fresh cow’s milk
3 – 4 cloves and 1 cinnamon stick
200 g butter
300 g sugar
300 g coarse semolina
1/2 cup crushed almonds or pistachios
Pistachios for garnish

METHOD

  1. Simmer the milk with the sugar, cinnamon and cloves, and then strain it.
  2. In a saucepan, melt the butter over a low heat, add the semolina, and continue stirring until it turns light golden-brown.
  3. Remove from heat and slowly add the milk, stirring constantly.
  4. Return the pan to the heat and continue stirring until the mixture comes off the sides of the pan.
  5. Pour the halvas into a well-oiled or damp mold, and press down lightly with a spoon.
  6. When it has cooled completely, unmold on a serving dish. Sprinkle with coarsely chopped pistachios.
