Lemon cake with butter glaze
INGREDIENTS (serves 6-8 people)
200 g butter
200 g icing sugar
300 g self-raising flour
4 eggs
Zest and juice from 2 whole lemons
Pinch of salt
For the glaze:
125 g butter, room temperature
225 g icing sugar
55ml STAMOU fresh cow’s milk
Lemon zest for garnish
METHOD
- Beat the butter and icing sugar together, until fluffy.
- Add the eggs one-by-one, and then the juice and lemon zest, and continue beating.
- Gradually add the flour in three portions and then add the salt.
- Butter a cake pan and pour in the mixture.
- Bake the cake at 160°C for approximately 50 minutes. Remove it from the oven and let the cake cool completely.
- Beat the butter until fluffy and gradually add the icing sugar and milk until combined.
- Glaze the cake using a spatula and sprinkle with a pinch of lemon zest.
