Lemon cake with butter glaze

INGREDIENTS (serves 6-8 people)

200 g butter
200 g icing sugar
300 g self-raising flour
4 eggs
Zest and juice from 2 whole lemons
Pinch of salt

For the glaze:
125 g butter, room temperature
225 g icing sugar
55ml STAMOU fresh cow’s milk
Lemon zest for garnish

METHOD

  1. Beat the butter and icing sugar together, until fluffy.
  2. Add the eggs one-by-one, and then the juice and lemon zest, and continue beating.
  3. Gradually add the flour in three portions and then add the salt.
  4. Butter a cake pan and pour in the mixture.
  5. Bake the cake at 160°C for approximately 50 minutes. Remove it from the oven and let the cake cool completely.
  6. Beat the butter until fluffy and gradually add the icing sugar and milk until combined.
  7. Glaze the cake using a spatula and sprinkle with a pinch of lemon zest.
