Fluffy Easter cookies ('koulourakia')

Fluffy Easter cookies ('koulourakia')

Preparation time: 20-25 minutes
Cooking time: 25 minutes

INGREDIENTS (for 15-20 cookies)
150 g butter
100 g melted butter
200 g sugar
4 eggs
50 ml STAMOU fresh cow’s milk
500 g all-purpose flour
1 tsp baker’s ammonia (ammonium carbonate powder)
½ tsp baking soda
Zest of 2 oranges

For the wash:
2 egg yolks
2 – 3 tbsp STAMOU fresh cow’s milk
Sesame and nigella seeds for sprinkling

METHOD

  1. Beat the two butters and the sugar in a mixing bowl with the mixer set at high speed, until fluffy.
  2. Lower the speed. Add the milk and the eggs one at a time.
  3. In a bowl, mix the flour with the baker’s ammonia, baking soda, and orange zest.
  4. Pour the mixture into the mixing bowl and knead with the hook attachment, until you have a soft and malleable dough.
  5. Take small pieces of the dough (about 20 g) and make the cookies into any shape you wish.
  6. Arrange the cookies on baking trays lined with greaseproof paper.
  7. Beat the egg yolks with the milk in a bowl and brush the surface of the cookies.
  8. Sprinkle with sesame and nigella seeds and bake the cookies in a preheated oven at 180oC (with fan) for about 25 minutes, until golden brown.
