RECIPES WITH MILK
Fluffy Easter cookies ('koulourakia')
Preparation time: 20-25 minutes
Cooking time: 25 minutes
INGREDIENTS (for 15-20 cookies)
150 g butter
100 g melted butter
200 g sugar
4 eggs
50 ml STAMOU fresh cow’s milk
500 g all-purpose flour
1 tsp baker’s ammonia (ammonium carbonate powder)
½ tsp baking soda
Zest of 2 oranges
For the wash:
2 egg yolks
2 – 3 tbsp STAMOU fresh cow’s milk
Sesame and nigella seeds for sprinkling
METHOD
- Beat the two butters and the sugar in a mixing bowl with the mixer set at high speed, until fluffy.
- Lower the speed. Add the milk and the eggs one at a time.
- In a bowl, mix the flour with the baker’s ammonia, baking soda, and orange zest.
- Pour the mixture into the mixing bowl and knead with the hook attachment, until you have a soft and malleable dough.
- Take small pieces of the dough (about 20 g) and make the cookies into any shape you wish.
- Arrange the cookies on baking trays lined with greaseproof paper.
- Beat the egg yolks with the milk in a bowl and brush the surface of the cookies.
- Sprinkle with sesame and nigella seeds and bake the cookies in a preheated oven at 180oC (with fan) for about 25 minutes, until golden brown.
