RECIPES WITH ICE-CREAM
Chocolate waffles with ice-cream
Preparation time: 30 minutes
INGREDIENTS (for 12 waffles)
250 g all-purpose flour, sifted
50 g cocoa, sifted
2½ tsp baking powder, sifted
½ tsp baking soda
A pinch of salt
70 g light brown sugar
100 g granulated sugar
1 tsp cinnamon
360 ml STAMOU fresh cow’s milk
75 g butter
2 eggs at room temperature (separated)
1 tsp vanilla extract
To serve:
STAMOU ice cream (the Yoghurt, Nuts & Berries flavour is great with this waffle recipe)
METHOD
- Heat up the waffle maker.
- Place the flour, cocoa, baking powder, baking soda, salt, light brown sugar, half the amount (50 g) of granulated sugar, and the cinnamon in a large bowl and mix well. Set aside.
- Place the milk, the 2 egg yolks, the butter, and the vanilla extract in another bowl, and beat gently until mixed.
- Pour the liquid mixture into the dry ingredients and mix with a silicone spatula.
- Beat the egg whites in another bowl with a hand mixer until foaming, and slowly add the remaining (50 g) granulated sugar, while continuing to beat the egg whites. The meringue will be ready when stiff peaks have formed.
- Slowly add the meringue to the chocolate mixture, gently mixing with a spatula, so that the mixture retains its airiness.
- Place a spoonful of the mixture on the waffle maker and close the lid.
- Cook the waffles for about 3 to 6 minutes, until they can be easily lifted from the waffle maker.
- Serve the waffles with scoops of ice cream.
