Biscotti Ice-Cream dessert

Biscotti Ice-Cream dessert

INGREDIENTS (serves 4 people)

1 kg Biscotti Ice Cream STAMOU
200 g sugar
100 ml water
2 ripe bananas (firm, not overly soft)
50 g STAMOU “Kerkyras” (Corfu-type) butter
2 tbsp salted pistachios (roughly chopped)
1 tbsp brandy or rum
Salted caramel syrup (optionally, for serving)

METHOD

  1. Heat the sugar and water over low heat without stirring. Once dissolved, increase the heat and let it turn into a golden caramel.
  2. Slice the bananas and add them to the caramel along with the butter. Let them caramelize on one side, then gently flip them over.
  3. Remove the caramelized bananas and place them on a plate.
  4. Add the pistachios and brandy to the caramel and stir to combine.
  5. Serve two scoops of Biscotti ice cream in bowls or glasses, top with caramelized bananas, and drizzle with the salty caramel sauce (optionally).
