RECIPES WITH ICE-CREAM
Biscotti Ice-Cream dessert

INGREDIENTS (serves 4 people)
1 kg Biscotti Ice Cream STAMOU
200 g sugar
100 ml water
2 ripe bananas (firm, not overly soft)
50 g STAMOU “Kerkyras” (Corfu-type) butter
2 tbsp salted pistachios (roughly chopped)
1 tbsp brandy or rum
Salted caramel syrup (optionally, for serving)
METHOD
- Heat the sugar and water over low heat without stirring. Once dissolved, increase the heat and let it turn into a golden caramel.
- Slice the bananas and add them to the caramel along with the butter. Let them caramelize on one side, then gently flip them over.
- Remove the caramelized bananas and place them on a plate.
- Add the pistachios and brandy to the caramel and stir to combine.
- Serve two scoops of Biscotti ice cream in bowls or glasses, top with caramelized bananas, and drizzle with the salty caramel sauce (optionally).
