Berry Trifle with yogurt

Berry Trifle with yogurt

INGREDIENTS
For the jam
200 g strawberries
200 g raspberries
200 g blueberries
80 g icing sugar
Zest and juice of 1 orange

For the cream
175 g cold heavy cream
600 g STAMOU Plousio 2% yogurt
86 g (about ¾ cup) icing sugar
Seeds from 1 vanilla pod
Zest of 1 orange

For assembling
15–20 ladyfingers (savoiardi biscuits)
8 tbsp orange liqueur, such as Cointreau
4 tbsp hot water
2 tbsp honey
Fresh berries, for decoration

METHOD

  1. Add half of the berries and strawberries to a saucepan with all the remaining jam ingredients.
  2. Simmer for 10 minutes until it thickens. Transfer to a medium bowl and let cool for about 20 minutes.
  3. In a medium bowl, whip the cold cream to stiff peaks and set aside. In a large bowl, mix the yogurt with the icing sugar, vanilla and zest until smooth.
  4. Gently fold in the whipped cream to create a light, fluffy mixture.
  5. In a bowl, mix the liqueur, hot water and honey and briefly dip the fingers into the mixture.
  6. Arrange half of the soaked ladyfingers in a glass bowl or a trifle dish (1–2 lt capacity).
  7. Spoon over half of the cream mixture and a few spoonfuls of jam. Repeat with another layer of ladyfingers, cream, and jam.
  8. Top with the remaining fresh berries and a little extra jam.
  9. Enjoy!
