RECIPES WITH CHEESE
Spring Tart with Graviera, Goat Cheese & Zucchini
Preparation time: 15 minutes
Baking time: 30 minutes
INGREDIENTS (serves 4–6)
1 sheet puff pastry
150 g STAMOU graviera cheese
2 medium eggs, beaten + 1 egg yolk
60 ml STAMOU fresh cow’s milk
150 g STAMOU cheese “to katsikaki mas”, crumbled
3 zucchinis
6 spring onions, finely chopped
2 tbsp fresh mint, chopped
2 tbsp olive oil
Freshly ground pepper
METHOD
- Preheat the oven to 180°C.
- Grate the graviera. Sauté the spring onions in olive oil for 1 – 2 minutes, then transfer to a bowl. Add the grated graviera, goat cheese, milk and a pinch of freshly ground pepper. Mix well.
- Open the puff pastry and score it all around, about 2 cm from the edge. Brush the border with an egg yolk diluted with a little water. Line the center with parchment paper.
- Bake for 10 – 15 minutes until the pastry starts to turn golden. Remove the baking paper and bake for another 5 minutes.
- Spread the cheese mixture over the centre. Slice the zucchinis into strips and arrange them on top.
- Bake for a further 10 – 15 minutes.
- Remove from the oven, sprinkle with fresh mint and serve.
