RECIPES WITH CHEESE
Kataifi Cheese and Pastirma Pie

INGREDIENTS
350 g kataifi pastry
4 tbsp butter
400 ml STAMOU fresh cow’s milk
2 large eggs
200 g STAMOU PDO feta, crumbled
300 g STAMOU graviera cheese, grated
2 eggs, beaten
120 g pastirma
Salt
Freshly ground pepper
Paprika
METHOD
- In a bowl, mix the cheeses with the pastirma and the beaten eggs.
- Divide the kataifi pastry into two equal parts, loosen and fluff it with your fingers.
- Butter a round baking dish or pyrex.
- Layer half of the kataifi in the dish, drizzle with half the butter, and spread the filling on top. Cover with the remaining kataifi.
- Whisk the eggs with the milk and paprika, then pour the mixture over the kataifi. Let it rest for one hour so the pastry absorbs the liquid.
- Drizzle with the remaining butter and bake in a preheated oven at 180°C for 40–45 minutes, until golden brown.
