RECIPES WITH YOGHURT
Yoghurt Terrine with Citrus Sauce

Cooking time: 10–15 minutes
INGREDIENTS (for 6 people)
FOR THE BASE
600 g STAMOU Plousio yoghurt
75 g sugar
400 g heavy cream
6 g powdered gelatin
2–3 drops orange or mandarin essence
FOR THE SAUCE
2 oranges
1 pink grapefruit
2 limes
4 tbsp honey
METHOD
- Soften the gelatin in 1–2 tablespoons of cold water.
- Heat the cream with the sugar over low heat until the sugar dissolves, then add the gelatin.
- In a large bowl, mix the yoghurt with the orange essence and slowly stir in the warm cream mixture.
- Transfer the mixture into a rectangular metal mold and refrigerate for 4–6 hours until set.
- For the sauce, peel and segment the citrus fruits, keeping their juices (about 200 ml).
- Simmer the citrus juices with the honey for 10–15 minutes, then add the fruit segments and remove from heat.
- Unmold the terrine, slice, and serve with the citrus sauce.
