Yoghurt Terrine with Citrus Sauce

Yoghurt Terrine with Citrus Sauce

Preparation time: 20 minutes
Cooking time: 10–15 minutes

INGREDIENTS (for 6 people)

FOR THE BASE
600 g STAMOU Plousio yoghurt
75 g sugar
400 g heavy cream
6 g powdered gelatin
2–3 drops orange or mandarin essence

 

FOR THE SAUCE
2 oranges
1 pink grapefruit
2 limes
4 tbsp honey

METHOD

  1. Soften the gelatin in 1–2 tablespoons of cold water.
  2. Heat the cream with the sugar over low heat until the sugar dissolves, then add the gelatin.
  3. In a large bowl, mix the yoghurt with the orange essence and slowly stir in the warm cream mixture.
  4. Transfer the mixture into a rectangular metal mold and refrigerate for 4–6 hours until set.
  5. For the sauce, peel and segment the citrus fruits, keeping their juices (about 200 ml).
  6. Simmer the citrus juices with the honey for 10–15 minutes, then add the fruit segments and remove from heat.
  7. Unmold the terrine, slice, and serve with the citrus sauce.
