Yoghurt cake with quince spoon sweet

Yoghurt cake with quince spoon sweet

INGREDIENTS (for a 22×10 cm loaf tin)

160 g butter, at room temperature
300 g all-purpose flour
1 tsp baking powder
250 g STAMOU Plousio yoghurt
3 eggs
300 g icing sugar
Zest of 1 lemon
Zest of 1 orange
1 jar quince spoon sweet, for serving

METHOD

  1. Preheat the oven to 160oC.
  2. Beat the eggs with the icing sugar until fluffy.
  3. Slowly add the butter and yoghurt, continuing to beat at a low speed.
  4. Mix the flour in a bowl with the baking powder and the zest. Add them to the yoghurt mixture, stirring until the ingredients are well combined.
  5. Butter the loaf tin and pour in the mixture.
  6. Bake for about 40 minutes.
  7. When the cake cools, sprinkle with icing sugar, and garnish with the quince spoon sweet.
