Traditional Kebab with Yoghurt

Traditional Kebab with Yoghurt

Preparation time: 15 minutes
Cooking time: 10 minutes

INGREDIENTS (serves 4 people)

700 g mixed ground meat (beef/lamb)
2 tbsp STAMOU ‘Plousio’ Yoghurt
1 grated onion
1 tsp ground cumin
1 tsp ground coriander
2 cloves garlic (finely chopped)
2 tbsp chopped parsley
400 g finely chopped tomatoes
½ tsp cinnamon
1 tsp smoked paprika
4 tbsp butter
2 tbsp grape molasses (petimezi)
2 tbsp lemon juice
2 tbsp parsley
1 clove garlic
200 g STAMOU “Plousio” Yoghurt
4 pita breads
Salt and freshly ground pepper or chili flakes (boukovo)

METHOD

  1. In a bowl, mix the ground meat, yogurt, onion, spices, parsley, and garlic thoroughly, then season with salt and pepper.
  2. Shape the mixture into long, flat kebabs and thread them onto skewers. Refrigerate for 1 hour.
  3. Heat half of the butter in a pan, then add the tomatoes, garlic, cinnamon, and a pinch of salt. Simmer for 10 minutes, stirring continuously.
  4. Add the grape molasses, lemon juice, and parsley.
  5. Grill the kebabs in the oven until golden brown or on a grill for about 8 minutes per side.
  6. Warm the pita breads, spread the tomato sauce over them, and place the kebabs on top.
  7. Spoon 2-3 tablespoons of yogurt over the kebabs, then sprinkle with smoked paprika and chopped parsley before serving.
