RECIPES WITH YOGHURT
Traditional Kebab with Yoghurt
Preparation time: 15 minutes
Cooking time: 10 minutes
INGREDIENTS (serves 4 people)
700 g mixed ground meat (beef/lamb)
2 tbsp STAMOU ‘Plousio’ Yoghurt
1 grated onion
1 tsp ground cumin
1 tsp ground coriander
2 cloves garlic (finely chopped)
2 tbsp chopped parsley
400 g finely chopped tomatoes
½ tsp cinnamon
1 tsp smoked paprika
4 tbsp butter
2 tbsp grape molasses (petimezi)
2 tbsp lemon juice
2 tbsp parsley
1 clove garlic
200 g STAMOU “Plousio” Yoghurt
4 pita breads
Salt and freshly ground pepper or chili flakes (boukovo)
METHOD
- In a bowl, mix the ground meat, yogurt, onion, spices, parsley, and garlic thoroughly, then season with salt and pepper.
- Shape the mixture into long, flat kebabs and thread them onto skewers. Refrigerate for 1 hour.
- Heat half of the butter in a pan, then add the tomatoes, garlic, cinnamon, and a pinch of salt. Simmer for 10 minutes, stirring continuously.
- Add the grape molasses, lemon juice, and parsley.
- Grill the kebabs in the oven until golden brown or on a grill for about 8 minutes per side.
- Warm the pita breads, spread the tomato sauce over them, and place the kebabs on top.
- Spoon 2-3 tablespoons of yogurt over the kebabs, then sprinkle with smoked paprika and chopped parsley before serving.
