RECIPES WITH BUTTER
Traditional Greek Christmas cookies ("kourabiedes")
INGREDIENTS (for 30-35 cookies)
200 g melted butter
100 g butter
150 g coarsely chopped almonds (roasted)
600 g all-purpose flour
½ tsp baking powder
100 g icing sugar
30 ml French brandy
a little rose water, and extra icing sugar for dusting
METHOD
- In a mixer, beat both butters with the icing sugar at high speed for at least 10 minutes.
- Gradually add the flour and baking powder and continue beating at medium-low speed for another 8-10 minutes.
- Add the almonds and brandy and mix with a spatula.
- Make balls with the dough and flatten them slightly between your palms.
- Bake the kourabiedes at 170°C for 20-25 minutes (depending on size).
- Remove, and when they have completely cooled, spray with rose water and cover completely with plenty of icing sugar.
