RECIPES WITH CHEESE
Strapatsada with goat cheese
INGREDIENTS (serves 4 people)
20 g STAMOU goat cheese “To katsikaki mas”
8 eggs
700 g ripe tomatoes (or 400 g tomatoes, grated)
1 teaspoon of tomato paste
2-3 tablespoons of olive oil
Salt and freshly ground pepper
Pinch of fresh (or dried) oregano
METHOD
- Grate the tomatoes, season them with salt and pepper and transfer them into a deep pan.
- Add the tomato paste, diluted in 2 tablespoons of warm water, and olive oil, and simmer for 10-15 minutes or until the sauce begins to come together.
- Lower the heat slightly and add the gently beaten eggs.
- Cook for approximately 10 minutes and add the shredded goat’s cheese.
- Remove from heat and serve with sprinkled oregano.
