Strapatsada with goat cheese

Strapatsada with goat cheese

INGREDIENTS (serves 4 people)

20 g STAMOU goat cheese “To katsikaki mas”
8 eggs
700 g ripe tomatoes (or 400 g tomatoes, grated)
1 teaspoon of tomato paste
2-3 tablespoons of olive oil
Salt and freshly ground pepper
Pinch of fresh (or dried) oregano

METHOD

  1. Grate the tomatoes, season them with salt and pepper and transfer them into a deep pan.
  2. Add the tomato paste, diluted in 2 tablespoons of warm water, and olive oil, and simmer for 10-15 minutes or until the sauce begins to come together.
  3. Lower the heat slightly and add the gently beaten eggs.
  4. Cook for approximately 10 minutes and add the shredded goat’s cheese.
  5. Remove from heat and serve with sprinkled oregano.
