RECIPES WITH CHEESE
Seafood "saganaki" with feta and herbs
INGREDIENTS (serves 6 people)
300 g STAMOU feta PDO
60 ml olive oil
500 g cleaned shrimps, with tails
400 g squids chopped in small pieces
3 octopus tentacles chopped into 2-3cm pieces
150 g mussels
2 Florina peppers, sliced
1 onion, roughly chopped
2 fennel bulbs, sliced
2 cloves of garlic, roughly chopped
600 g tomatoes, roughly chopped
1 shot of ouzo
2 tablespoons of dill, roughly chopped
Salt and freshly ground pepper
METHOD
- Sauté the onions, fennel, and garlic in the olive oil until they soften.
- Add the chopped tomatoes, the sugar and ouzo, and gently cook for 3-4 minutes.
- Add the seafood, Florina peppers, salt & pepper, and continue cooking for 10 minutes.
- Transfer the food to an oven-safe dish and add feta on top.
- Bake in the oven for 10 minutes at approximately 200°C.
- Sprinkle with dill and serve with roasted slices of bread drizzled with olive oil, oregano and coarse salt.
*”Saganaki” is a Greek word used for pan-seared cheese.
