Savoury cake with herbs

INGREDIENTS (for a 25×12 cm loaf tin)

250 g self-raising flour
300 g STAMOU graviera cheese, grated
6 large eggs
130 ml STAMOU fresh cow’s milk
2 tbsp butter
50 ml cream
1 small bunch of fresh mixed herbs, finely chopped (parsley, basil, thyme)
Salt and freshly ground pepper
Sun-dried tomato tapenade, to serve

METHOD

  1. Preheat the oven to 180oC (160oC with fan).
  2. Mix the flour with ¼ teaspoon salt. In another bowl, beat the eggs with the milk, cream, and butter. Pour the mixture into the bowl with the flour and mix until combined.
  3. Add the graviera cheese, herbs, and freshly ground pepper.
  4. Pour the mixture into the well-buttered loaf tin and bake for 30 minutes.
  5. Cover with aluminum foil and continue baking for another 10-15 minutes.
  6. When it has completely cooled, cut into slices and serve with sun-dried tomato pâté.

 For the sun-dried tomato pâté

Add 150 g sun-dried tomatoes and 3 tablespoons olive oil to a blender, and blend until smooth.
