RECIPES WITH YOGHURT
Roasted Potatoes with Yogurt Dip
Preparation time: 30 minutes
Serves: 4-6 people
INGREDIENTS
FOR THE POTATOES
500 g baby potatoes
500 g sweet potatoes, in wedges
1 garlic clove, finely chopped
Salt and pepper
1 tbsp smoked paprika
50 ml olive oil
Sprigs of fresh thyme
FOR THE YOGURT DIP
1 STAMOU Rich yogurt
Zest of 1 lime
1 tbsp olive oil
1 tsp Dijon mustard
1 tsp honey
1 tbsp smoked paprika
Salt and pepper, to taste
FOR SERVING
Chili flakes
Thyme
METHOD
- Preheat the oven to 200°C (fan).
- Boil the potatoes for 15 minutes in boiling water.
- Drain and place the potatoes on a baking tray. Using a potato masher or fork, press the baby potatoes, then add the sweet potatoes and the remaining ingredients.
- Bake for 20 minutes.
- To make the dip, in a medium bowl, whisk the yogurt, lime zest, olive oil, mustard, honey, smoked paprika, salt, and pepper.
- Serve the potatoes on a platter, sprinkle with chilly flakes and fresh thyme, and accompany with the yogurt dip.
