RECIPES WITH ICE-CREAM
Roasted peaches with ice cream
INGREDIENTS (serves 4 people)
½ kg STAMOU “Kaimaki” flavour ice cream
4 ripe peaches or nectarines
2 tbsp sugar (light brown)
½ tsp ground cinnamon
½ tsp ground cloves
50 g pistachios, coarsely crushed
(for the peaches + 60 g butter)
METHOD
- In a bowl, mix the sugar with the spices.
- Cut the peaches in half, remove the pits, and dip once or twice in the sugar.
- Place them in a baking tin, put a knob of butter on each, and bake at 200oC for 10 minutes (with fan), until the sugar melts and they begin to caramelise.
- Divide the peaches among 4 bowls and serve each one with 2 scoops of “Kaimaki” ice cream.
- Sprinkle with the pistachios.
