Oven-baked pasta with baked feta cheese, cherry tomatoes, and basil
Preparation time: 15 minutes
Cooking time: 30 minutes
INGREDIENTS (serves 4 people)
600 g cherry tomatoes
1 small red onion, thinly sliced
½ cup olive oil
300 g STAMOU PDO feta cheese
400 g short macaroni pasta
A little fresh oregano
Zest of 1 lemon
Salt, and a few chili flakes (optional)
Fresh basil leaves
METHOD
- Preheat the oven to 180oC.
- Place the cherry tomatoes, onion, and olive oil in a deep baking tin or oven-proof dish. Season with salt and pepper, and stir.
- Place the feta cheese in the centre and sprinkle with fresh oregano.
- Bake for 25 – 30 minutes, until the feta cheese turns slightly golden on the outside.
- Boil the pasta in a saucepan with salted water and strain, reserving half a cup of the pasta water.
- Add the cooked pasta and the reserved water to the dish with the baked feta cheese and the cherry tomatoes.
- Stir gently. Sprinkle with lemon zest, fresh basil and chili flakes (optional).
