Oven-baked pasta with baked feta cheese, cherry tomatoes, and basil

Oven-baked pasta with baked feta cheese, cherry tomatoes, and basil

Preparation time: 15 minutes
Cooking time: 30 minutes

INGREDIENTS (serves 4 people)

600 g cherry tomatoes
1 small red onion, thinly sliced
½ cup olive oil
300 g STAMOU PDO feta cheese
400 g short macaroni pasta
A little fresh oregano
Zest of 1 lemon
Salt, and a few chili flakes (optional)
Fresh basil leaves

METHOD

  1. Preheat the oven to 180oC.
  2. Place the cherry tomatoes, onion, and olive oil in a deep baking tin or oven-proof dish. Season with salt and pepper, and stir.
  3. Place the feta cheese in the centre and sprinkle with fresh oregano.
  4. Bake for 25 – 30 minutes, until the feta cheese turns slightly golden on the outside.
  5. Boil the pasta in a saucepan with salted water and strain, reserving half a cup of the pasta water.
  6. Add the cooked pasta and the reserved water to the dish with the baked feta cheese and the cherry tomatoes.
  7. Stir gently. Sprinkle with lemon zest, fresh basil and chili flakes (optional).
