Mushrooms in herb-flavoured wine sauce with rice

INGREDIENTS (serves 4 people)

120ml milk cream
500 – 600 g mixed mushroom varieties, sliced or roughly chopped
2 tsp salt
1 onion, finely chopped
2 tbsp olive oil
1 tbsp butter
120 ml aromatic white wine
100 ml vegetable broth
3 tbsp mixed fresh herbs, finely chopped (parsley, thyme, chives)
Salt and freshly ground pepper
Rice to serve

METHOD

  1. Heat the olive oil and butter and sauté the onion and then the mushrooms over medium-high heat for 5-6 minutes, until golden.
  2. Deglaze the pan with the wine, season with salt and pepper, and lower the heat.
  3. Sprinkle with flour, mix well, and add the vegetable broth.
  4. Simmer for 2 – 3 minutes, add the cream and herbs, and stir for 1 – 2 minutes.
  5. Serve the mushrooms with rice and sprinkle with a little chopped parsley.
