RECIPES WITH BUTTER
Mushrooms in herb-flavoured wine sauce with rice
INGREDIENTS (serves 4 people)
120ml milk cream
500 – 600 g mixed mushroom varieties, sliced or roughly chopped
2 tsp salt
1 onion, finely chopped
2 tbsp olive oil
1 tbsp butter
120 ml aromatic white wine
100 ml vegetable broth
3 tbsp mixed fresh herbs, finely chopped (parsley, thyme, chives)
Salt and freshly ground pepper
Rice to serve
METHOD
- Heat the olive oil and butter and sauté the onion and then the mushrooms over medium-high heat for 5-6 minutes, until golden.
- Deglaze the pan with the wine, season with salt and pepper, and lower the heat.
- Sprinkle with flour, mix well, and add the vegetable broth.
- Simmer for 2 – 3 minutes, add the cream and herbs, and stir for 1 – 2 minutes.
- Serve the mushrooms with rice and sprinkle with a little chopped parsley.
