RECIPES WITH BUTTER
Mosaic cake with dried fruits
INGREDIENTS (serves 8-10 people)
200 g couverture, broken into small pieces
300 g biscuits, broken into small pieces
230 g butter
50 g cocoa
100 ml Mavrodafni wine or/ other sweet red wine
200 g assorted dried fruits, chopped (apricots, dates, pineapple etc.)
METHOD
- Soak the dried fruits in the Mavrodafni wine for at least 30 minutes, and then strain.
- Melt the couverture in a bain-marie with the butter.
- Add the biscuits, chopped dried fruits and cocoa, and mix carefully.
- Transfer the mixture into a long cake mold lined with plastic wrap.
- Using a spatula, pat down the mixture and then leave it in the refrigerator for 3-4 hours.
- Cut the log into slices, dust with cocoa and serve.
