Mosaic cake with dried fruits

Mosaic cake with dried fruits

INGREDIENTS (serves 8-10 people)

200 g couverture, broken into small pieces
300 g biscuits, broken into small pieces
230 g butter
50 g cocoa
100 ml Mavrodafni wine or/ other sweet red wine
200 g assorted dried fruits, chopped (apricots, dates, pineapple etc.)

METHOD

  1. Soak the dried fruits in the Mavrodafni wine for at least 30 minutes, and then strain.
  2. Melt the couverture in a bain-marie with the butter.
  3. Add the biscuits, chopped dried fruits and cocoa, and mix carefully.
  4. Transfer the mixture into a long cake mold lined with plastic wrap.
  5. Using a spatula, pat down the mixture and then leave it in the refrigerator for 3-4 hours.
  6. Cut the log into slices, dust with cocoa and serve.
