RECIPES WITH MILK
Mini milk pies with "anthotyro" cheese and honey
Preparation time: 15 minutes
Cooking time: 20-25 minutes
INGREDIENTS (for 20-22 small pies)
4-5 sheets of phyllo pastry
100 g melted butter
Brown sugar to sprinkle on top
For the filling:
500 ml STAMOU fresh cow’s milk
1 egg, beaten
25 g fine semolina
100 g flour
120 g sugar
100 g crumbled anthotyro cheese
50 g butter
METHOD
- Heat milk over medium heat.
- Gradually add the semolina, sugar, butter, egg, and flour, stirring constantly.
- Lower the heat and continue stirring until the cream thickens.
- Remove from heat and add the anthotyro cheese.
- Cut each sheet of phyllo pastry into 4 – 5 strips.
- Butter a strip and place a spoonful of filling at one end.
- Fold the strip over and over to make a triangular pie. Do the same for each remaining strip.
- Sprinkle the pies with sugar.
- Bake in a preheated oven at 160oC (with fan) for about 20 – 25 minutes until golden brown.
- Drizzle with honey and serve.
* Anthotyro cheese is a Greek cheese similar to Italian ricotta.
