Milk pie with cinnamon essence

Milk pie with cinnamon essence

Preparation time: 30 minutes
Cooking time: 50 minutes

INGREDIENTS (serves 6-8 people)
6 phyllo pastry sheets
5 tablespoons of cinnamon and sugar
4-5 tablespoons butter
1 shot of cinnamon liqueur (optional)

For the filling:
1L STAMOU cow’s milk
1 tablespoon butter
120 g fine semolina
160 g sugar
2 eggs
A pinch of salt

METHOD

  1. Beat the sugar, eggs, salt, and half of the milk together.
  2. Warm the remaining milk in a pan and gradually add the semolina, stirring continuously.
  3. Then add the egg mixture and continue stirring until the cream thickens.
  4. Remove the cream from heat, add the butter and let the mixture cool.
  5. Butter the phyllo sheets one-by-one, sprinkling cinnamon and sugar on top, and lay them out in a circular baking pan.
  6. Pour the cream mixture on top of the pastry and fold the protruding phyllo sheets over the top of the cream mix.
  7. Sprinkle with cinnamon and sugar and bake at 170°C for approximately 50 minutes.
