RECIPES WITH YOGHURT
Lemon-flavoured pancakes with Kefir
INGREDIENTS (for 12 pancakes)
1 330ml bottle of STAMOU Kefir (natural flavour)
2 large eggs
2 tbsp honey
Zest of 1 lemon
280 g flour
2 tsp baking powder
½ tsp salt
60 g butter
To garnish:
2 – 3 tbsp honey
200 g fresh blueberries
METHOD
- In a bowl, mix the flour, baking powder, and salt.
- In another bowl, mix the kefir, eggs, honey, and lemon zest.
- Combine the contents of both bowls and mix thoroughly, until the batter is smooth and well combined.
- Warm ½ teaspoon of butter over a medium heat (in a non-stick frying pan) and pour in two large tablespoons of the batter.
- Add a few blueberries on top. Cook for about 3-4 minutes and turn the pancakes over.
- After 2-3 minutes, remove them with a spatula and continue cooking the rest of the batter.
- Garnish with honey or jam and blueberries.
