Lemon-flavoured pancakes with Kefir

Lemon-flavoured pancakes with Kefir

INGREDIENTS (for 12 pancakes)

1 330ml bottle of STAMOU Kefir (natural flavour)
2 large eggs
2 tbsp honey
Zest of 1 lemon
280 g flour
2 tsp baking powder
½ tsp salt
60 g butter

To garnish:
2 – 3 tbsp honey
200 g fresh blueberries

METHOD

  1. In a bowl, mix the flour, baking powder, and salt.
  2. In another bowl, mix the kefir, eggs, honey, and lemon zest.
  3. Combine the contents of both bowls and mix thoroughly, until the batter is smooth and well combined.
  4. Warm ½ teaspoon of butter over a medium heat (in a non-stick frying pan) and pour in two large tablespoons of the batter.
  5. Add a few blueberries on top. Cook for about 3-4 minutes and turn the pancakes over.
  6. After 2-3 minutes, remove them with a spatula and continue cooking the rest of the batter.
  7. Garnish with honey or jam and blueberries.
