RECIPES WITH CHEESE
Karystos' local cheese pies
INGREDIENTS (for 6 – 8 cheese pies)
350 g STAMOU sheep’s or goat’s cheese
Freshly ground black pepper
Dry oregano (optional)
2 tbsp cornflour
2 tbsp butter
Sunflower oil or olive oil for frying
For the pastry:
250 g all-purpose flour
160 ml lukewarm water
20 ml olive oil
1 tsp vinegar
1 egg white, beaten
A pinch of sugar
Flower honey, to serve
METHOD
- Mix the ingredients for the pastry and knead until it forms a pliable dough.
- Cut into 6-8 pieces and sprinkle with a little cornflour (or flour).
- Roll out each piece of dough into a sheet. Take one of the sheets and add crumbled cheese over the entire surface. Sprinkle with a little freshly ground black pepper and a little dried oregano.
- Brush around the edges with a little egg white, fold over, and seal the edges to form a pouch. Repeat with the rest of the ingredients.
- Fry the cheese pies in the oil in a deep frying pan until golden brown.
