Fluffy omelet with feta cheese and mint

Fluffy omelet with feta cheese and mint

INGREDIENTS

6 eggs
2 – 3 tbsp STAMOU fresh cow’s milk
6 tbsp crumbled feta cheese
1 tbsp olive oil
½ cup fresh mint (finely chopped)
salt and freshly ground pepper

METHOD

  1. Beat the egg yolks with the milk and season with salt and freshly ground pepper.
  2. Beat the egg whites until stiff peaks are formed and incorporate them into the egg yolk mixture with a spatula.
  3. Heat the olive oil in a shallow frying pan over a medium heat and pour in the mixture. Sprinkle feta cheese evenly over the surface and then sprinkle the mint on top.
  4. Cook for 5-7 minutes until the mixture starts to thicken.
  5. Carefully fold in half and serve.
  6. Garnish with fresh mint.

TIP: Cover the pan with a lid to allow the omelet to cook through or finish off in the oven for 3-4 minutes (assuming that you are using an oven-proof pan).
