RECIPES WITH CHEESE
Fluffy omelet with feta cheese and mint
INGREDIENTS
6 eggs
2 – 3 tbsp STAMOU fresh cow’s milk
6 tbsp crumbled feta cheese
1 tbsp olive oil
½ cup fresh mint (finely chopped)
salt and freshly ground pepper
METHOD
- Beat the egg yolks with the milk and season with salt and freshly ground pepper.
- Beat the egg whites until stiff peaks are formed and incorporate them into the egg yolk mixture with a spatula.
- Heat the olive oil in a shallow frying pan over a medium heat and pour in the mixture. Sprinkle feta cheese evenly over the surface and then sprinkle the mint on top.
- Cook for 5-7 minutes until the mixture starts to thicken.
- Carefully fold in half and serve.
- Garnish with fresh mint.
TIP: Cover the pan with a lid to allow the omelet to cook through or finish off in the oven for 3-4 minutes (assuming that you are using an oven-proof pan).
