RECIPES WITH CHEESE
Easy spinach pie with fennel
INGREDIENTS (serves 8-10 people)
400 g STAMOU barrel-aged feta PDO
4-5 tablespoons of butter
8 phyllo pastry sheets
1 kilo spinach, roughly chopped
1 onion, roughly chopped
100 g STAMOU graviera, grated
50 ml olive oil
1 small bunch of dill, roughly chopped
4-5 fresh spring onions, roughly chopped
3 eggs, beaten
2 tablespoons of breadcrumbs
Zest from 1 lemon
Black cumin
Salt and freshly ground pepper
METHOD
- Sauté the onions, spinach, and spring onions in olive oil until they soften.
- Leave them to cool, add the dill and eggs, and then season with salt and pepper.
- Mix ingredients together and add the crumbled feta, breadcrumbs and the graviera.
- Butter a 26-28cm baking pan and lay out the sheets of buttered phyllo.
- Pour the mixture into the center and turn the phyllo sheets inwards to cover the filling.
- Sprinkle with coarse salt and black cumin.
- Bake in the oven for approximately 35-40 minutes, until brown.
- Leave to cool before serving.
