RECIPES WITH MILK
Cookies with 2 kinds of butter
INGREDIENTS (makes approx. 28-30 cookies)
100 g Corfu-type butter
100 g melted butter
180 g sugar
100ml STAMOU fresh cow’s milk
50 ml cognac
2 egg yolks
500 g soft flour
1.5 teaspoons of baking powder
Zest from 2 mandarins
1 yolk for glazing
Milk for glazing
Pinch of salt
METHOD
- In a mixing bowl, beat the butter, sugar, salt and zest together until fluffy (approx. 4-5 minutes).
- Slowly add egg yolks, milk, flour and baking powder, and beat until the ingredients form a smooth mixture.
- Knead the mixture by hand until it becomes a dough.
- Separate the dough into pieces and shape the cookies into the shape of your choice. Place them on a baking pan, leaving space between them.
- Lightly glaze with the egg yolk & milk blend and bake in the oven at 180°C for approximately 20 minutes.
