Cheese pie with "kantaifi"
INGREDIENTS (serves 8 people)
600 ml STAMOU fresh cow’s milk
1 package kantaifi phyllo pastry
5 tbsp butter
4 large eggs
350 g STAMOU barrel-aged feta PDO
100 g STAMOU graviera cheese, grated
2 – 3 tbsp fresh mint, finely chopped
1 tsp chili flakes (optional)
METHOD
- Heat the butter and pour over the kantaifi.
- Place it in a baking tin and bake for 15 minutes until golden.
- Break it up into small pieces with your hands, and spread half of it over a well-buttered 26 cm pan, making sure to cover the sides as well.
- In a deep bowl, beat the 2 eggs, add the cheeses and the mint, and mix well.
- Pour the filling into the center of the tin and cover with the rest of the kantaifi.
- Beat the remaining eggs and add the milk. Pour the milk mixture over the cheese pie and set it aside to absorb the liquid for 30 minutes.
- Bake at 180oC for 30 – 40 minutes until golden brown.
- Sprinkle with thyme and chili flakes, and serve.
*Kantaifi is a pastry made with a special form of shredded phyllo dough which looks like angel pasta.
