Cheese pie with "kantaifi"

Cheese pie with

INGREDIENTS (serves 8 people)

600 ml STAMOU fresh cow’s milk
1 package kantaifi phyllo pastry
5 tbsp butter
4 large eggs
350 g STAMOU barrel-aged feta PDO
100 g STAMOU graviera cheese, grated
2 – 3 tbsp fresh mint, finely chopped
1 tsp chili flakes (optional)

METHOD

  1. Heat the butter and pour over the kantaifi.
  2. Place it in a baking tin and bake for 15 minutes until golden.
  3. Break it up into small pieces with your hands, and spread half of it over a well-buttered 26 cm pan, making sure to cover the sides as well.
  4. In a deep bowl, beat the 2 eggs, add the cheeses and the mint, and mix well.
  5. Pour the filling into the center of the tin and cover with the rest of the kantaifi.
  6. Beat the remaining eggs and add the milk. Pour the milk mixture over the cheese pie and set it aside to absorb the liquid for 30 minutes.
  7. Bake at 180oC for 30 – 40 minutes until golden brown.
  8. Sprinkle with thyme and chili flakes, and serve.

*Kantaifi is a pastry made with a special form of shredded phyllo dough which looks like angel pasta.
