Beetroot Salad with yoghurt and walnuts

Beetroot Salad with yoghurt and walnuts

INGREDIENTS (serves 4 people)

400 g STAMOU Plousio yoghurt with 10% fat
500 g boiled beetroots
2 cloves of garlic, roughly chopped (optional)
2 tablespoons of olive oil
100 g walnuts, finely chopped
1 teaspoon of salt
2 tablespoons of mint, roughly chopped

METHOD

  1. Cut the beets into small pieces and transfer to a bowl.
  2. Add vinegar, olive oil, salt, garlic and walnuts to the yoghurt and mix well.
  3. Refrigerate, leave to cool and serve with mint sprinkled on top.

Tip: Goes well with rusks or breadsticks.
