RECIPES WITH YOGHURT
Baked sweet potatoes with yoghurt sauce
Preparation time: 10 minutes
Cooking time: 35 – 40 minutes
INGREDIENTS (serves 6 people)
4 large sweet potatoes
3 tbsp olive oil
3 tbsp chives, finely chopped
½ tsp fleur de sel
Freshly ground black pepper
Fresh thyme
For the yoghurt sauce:
200 g STAMOU Plousio yoghurt with 5% fat
2 tbsp lemon juice
2 tbsp olive oil
METHOD
- Peel the sweet potatoes and cut them into wedges.
- Place them in a baking tin lined with baking paper (without one overlapping the other).
- Drizzle with olive oil and sprinkle with fleur de sel, freshly ground pepper and thyme.
- Bake the sweet potatoes in a preheated oven at 180oC (with fan) for about 35-40 minutes, until soft and golden brown at the edges.
- Place the yoghurt, lemon juice, and olive oil in a bowl and mix well.
- Drizzle the sweet potatoes with the yoghurt sauce.
- Sprinkle with the chopped chives and serve.
