Baked sweet potatoes with yoghurt sauce

Baked sweet potatoes with yoghurt sauce

Preparation time: 10 minutes
Cooking time: 35 – 40 minutes

INGREDIENTS (serves 6 people)

4 large sweet potatoes
3 tbsp olive oil
3 tbsp chives, finely chopped
½ tsp fleur de sel
Freshly ground black pepper
Fresh thyme

For the yoghurt sauce:
200 g STAMOU Plousio yoghurt with 5% fat
2 tbsp lemon juice
2 tbsp olive oil

METHOD

  1. Peel the sweet potatoes and cut them into wedges.
  2. Place them in a baking tin lined with baking paper (without one overlapping the other).
  3. Drizzle with olive oil and sprinkle with fleur de sel, freshly ground pepper and thyme.
  4. Bake the sweet potatoes in a preheated oven at 180oC (with fan) for about 35-40 minutes, until soft and golden brown at the edges.
  5. Place the yoghurt, lemon juice, and olive oil in a bowl and mix well.
  6. Drizzle the sweet potatoes with the yoghurt sauce.
  7. Sprinkle with the chopped chives and serve.
