Seafood "saganaki" with feta and herbs

INGREDIENTS (serves 6 people)

300 g STAMOU feta PDO
60 ml olive oil
500 g cleaned shrimps, with tails
400 g squids chopped in small pieces
3 octopus tentacles chopped into 2-3cm pieces
150 g mussels
2 Florina peppers, sliced
1 onion, roughly chopped
2 fennel bulbs, sliced
2 cloves of garlic, roughly chopped
600 g tomatoes, roughly chopped
1 shot of ouzo
2 tablespoons of dill, roughly chopped
Salt and freshly ground pepper

METHOD

  1. Sauté the onions, fennel, and garlic in the olive oil until they soften.
  2. Add the chopped tomatoes, the sugar and ouzo, and gently cook for 3-4 minutes.
  3. Add the seafood, Florina peppers, salt & pepper, and continue cooking for 10 minutes.
  4. Transfer the food to an oven-safe dish and add feta on top.
  5. Bake in the oven for 10 minutes at approximately 200°C.
  6. Sprinkle with dill and serve with roasted slices of bread drizzled with olive oil, oregano and coarse salt.

*”Saganaki” is a Greek word used for pan-seared cheese.
