Easy spinach pie with fennel

Easy spinach pie with fennel

INGREDIENTS (serves 8-10 people)

400 g STAMOU barrel-aged feta PDO
4-5 tablespoons of butter
8 phyllo pastry sheets
1 kilo spinach, roughly chopped
1 onion, roughly chopped
100 g STAMOU graviera, grated
50 ml olive oil
1 small bunch of dill, roughly chopped
4-5 fresh spring onions, roughly chopped
3 eggs, beaten
2 tablespoons of breadcrumbs
Zest from 1 lemon
Black cumin
Salt and freshly ground pepper

METHOD

  1. Sauté the onions, spinach, and spring onions in olive oil until they soften.
  2. Leave them to cool, add the dill and eggs, and then season with salt and pepper.
  3. Mix ingredients together and add the crumbled feta, breadcrumbs and the graviera.
  4. Butter a 26-28cm baking pan and lay out the sheets of buttered phyllo.
  5. Pour the mixture into the center and turn the phyllo sheets inwards to cover the filling.
  6. Sprinkle with coarse salt and black cumin.
  7. Bake in the oven for approximately 35-40 minutes, until brown.
  8. Leave to cool before serving.
